Can you believe Christmas is tomorrow already?
Where has the time gone! Not only that but we have only 7 more days until the new year! Which I am absolutely STOKED for.
I have been doing a ton of goal charting/planning for this new year and I am pumped for all the exciting changes I’m planning to make. 2020 will be a year of big things. I mean it’s not just a new year, but a new decade too

For us, it will be a pretty quiet year and we won’t be venturing too far from home. But we do have quite a bit of people coming over to visit which is nice!
I plan on spending the next few days reading, watching Christmas movies, playing board games and whipping up some more homemade treats like vegan eggnog and vegan dark chocolate! We made our first batch on Saturday and it turned out absolutely divine. I’ll be releasing that recipe soon too!
Now, today I’m releasing an update to my original vegan gf waffle…
and that is a GINGERBREAD version
I don’t know about you, but I love all the Christmas inspired flavours… and I am an even bigger fan when it comes to healthy options with those flavours
And this recipe is exactly that!

So without further ado, here ya go babes
- 1 cup blanched almond flour
- 1/2 cup tapioca starch
- 1 tsp baking powder
- 1 tbsp ground chia seeds + 3 tbsp water
- 1/2 cup plant milk
- 2 tbsp apple sauce
- 2 tbsp almond butter
- 1 tsp apple cider vinegar
- 2 tbsp organic molasses
- 1 tsp vanilla extract
- 1/4 tsp pink Himalayan salt
- 1/4 tsp allspice
- 1/4 tsp cloves
- 1/2 tsp cinnamon
- 1 tsp ground ginger
STEP 1: Combine the ground chia and water in a bowl, whisk together and set aside to thicken.
STEP 2: Add the almond flour, tapioca starch, baking powder, salt and spices in a large mixing bowl and mix together.
STEP 3: Add in all remaining ingredients and whisk together. Stir in the chia egg.
STEP 4: Heat a waffle maker and add a touch of coconut oil to prevent sticking.
STEP 5: Use a ladle to scoop out the batter into the waffle maker. Repeat until all batter has been used. Serve with maple syrup, icing sugar, coconut whipped cream and/or berries. Best if eaten right away!
