I’m currently living in San Juan Del Sur, Nicaragua with my husband and step-son, and to be honest, the slower paced life has taken us all a little by surprise.
No longer are we hustling and rushing around as we did when we lived in Canada- instead, we rise with the sun, follow our hearts during the day for what we want to do, and go to bed nice and early.
In following this lifestyle, we’ve learned a few things. And the first and most important is that routines are absolutely necessary for some normalcy.
We love having an active lifestyle and eating healthy- and this is where a large part of our routines have come in. We have been committing to daily walks and exercise, and have been experimenting with all kinds of new local vegetables and fruit.
From this, stemmed some new delicious recipes which will be in the weeks to follow. Today’s recipe is a super easy one, and also a delicious one.
This smoothie was whipped together quite fast- and the vibrant colour was stunning. However, I do remember having dragon fruit back in Canada and the inside was not red like the ones here. For that reason, you might want to consider adding a natural red colour enhancer, like dragon fruit powder or cranberry extract powder.
Either way, I’m positive the recipe will be just as delicious.

INGREDIENTS
- 1 banana
- 1/2 of a ripe dragon fruit
- 1/2 cup pineapple chunks
- 1/4 cup no-sugar added orange juice (with pulp)
- 1 1/2 cup unsweetened almond milk
DIRECTIONS
STEP 1: Combine all ingredients in a high-speed blender until smooth.
